Unleashing My MasterChef-ry

EEK I”m itching to update y’all on what happened yesterday but I forgot to save the photos so this cooking post will have to do for now. And quite frankly, I’m pretty damn sure my post title doesn’t make sense.

Let me present you my projects done over the LONG weekend. I made it a point to cook at least one meal at home for all three days :) 

I’ve fallen in love with cooking and think I’ve gotten good  decent over the years :D Practice makes almost perfect in this case. These days even chopping onions and garlic excite me!!

I shall start with the sweet stuff first.

This is Earl Grey ICE CREAM! Yea, who knew making ice cream would be THIS easy! This was a simple combination of evaporated milk, condensed milk, whipping cream and some early grey tea bags. That’s it! The texture is most definitely kulfi-like, meaning it melts almost instantly in the mouth and plate. I would however go slow with the condensed milk as it can get a way too sweet. This ladies and gents is the Molten Lava Cake. We’ve tried it in various places before so I thought it would be nice to bake something in our oven. I usually bake at my mom’s place, under her watchful eyes so I was a tad nervous attempting to bake all by myself. But what do you know…..

It came out gorgeous. I cut down on the sugar to avoid being super sweet. Instead of all the other ’spices’ called for, I substituted it with instant coffee and wala!

I naturally had to include an Indian dish for the sake of my hubby. So I decided on the Chicken Tikka Masala recipe plucked from here. I did some modifications like adding in some green pepper, black pepper, spices and some sugar. As I’m a HUGE fan of simple recipes and ingredients (gee can’t you tell), this is indeed an easy version of Tikka Masala and a must try!

Served it with some frozen paratha. You’re mad if you think I was gonna make paratha from scratch. Now I just need to learn how to make some good paneer to go with it. Any recipes to share?

This was Monday’s dinner! I whipped out chicken breast in garlic cream sauce with a side of spicy wedges. It was divine. Of course the recipe wasn’t exactly good so I frantically had to modify it until it sauce was yummy. Can’t recall where I found this recipe from.

Empty plate usually means something doesn’t it?

I”d like to think so :D

Think for this weekend I”ll just take a break from cooking and let the hubby pamper me by dining out.

Right, truth is, we’ll be busy using up our vouchers bought by various group discount sites, hah.

      Aww thanks! Try it when you can, but try to add in lots of ground cumin and paprika to bring out the flavor :)
